I'm sure you love her, but you really need to have some basic rules about what doesn't make sense in a relationship and the fact that you need to come first (now that you are vowing to spend the rest of your lives together, and all).
Ask your fiancée why she didn't just tell her sister she looked great and that she wasn't fat instead of non verbally agreeing with her sisters thought by giving her time to lose weight.
I think this sounds like cold feet and she used her sister as a way out. Her sister might have felt self conscious. But that is no excuse to not marry someone.
I'm pretty sure she would have tried that before calling off her entire wedding last minute for one person. unless she got cold feet or something and was looking for an excuse to stall/get out of it. but that'd be a different issue entirely
