It's a word with French origins. In French, nouns are classified as either masculine or feminine. (There is no gender specification of nouns in English.) Some words are made feminine by simply adding an "e" to the end. Therefore, "fiancé" is a masculine word, made feminine by adding "e", ergo "fiancée". The more you know :)
