Unless you are directly involved with his doctor or insurance company, I fail to see the conflict of interest. if anything it would make you better at your job, since he would benefit from the research and you would benefit from close interactions

Go for it. Nobody cares! If one data point is going to throw off your research, your sample size is too small for influential work.

If you feel that strongly, why not ask your director/HR and see if there's something you can do if an official declaration is made.. There's always a way...

It’s not unethical if you declare any potential conflict of interest and invite review of any data concerning him. Life is short and true love is relatively rare. Figure it out.

I think what she means is that a researcher doesn't date the research, it would be like a whiskey maker dating a drunk or a police officer dating a convict not to mention that most researchers are barred from personal contact with the research subjects unfortunately.

If he is not a subject of your study or you do not have access to confidential information about him personally as a result of your work then it is not unethical to date.
