The best thing to do when someone says they are not interested is to move on until you find someone who is interested in you and who interests you… Dating is not usually an economic trade off where if one person is well paid they can attract anyone they want regardless of their personality. That would be prostitution in a way if that were the case. Economics, education, and career is often a factor, but it’s just one factor out of several… Others have said it or implied it - OP you come off as arrogant and entitled. Nobody likes that. You need to recalibrate your expectations and learn some social skills. But even more importantly, you need to listen to the people around you. If they say they aren’t interested, it’s not a challenge, it’s a sign that you need to leave them alone and look for someone who might value you for who you are.

Look, I’m about to spit some real shit here. You know why you can’t get a date? It’s because of shit like this. You’re so hung up on one specific person that you can’t look past the fact that the two of you just are not a good fit. Move on and do so with no expectations. I had a fling last year with a much younger woman who was smart, spirited and hot as hell. She decided to move on from me. It hurt like hell but I tried again - and met the woman I’m dating today who’s even more spectacular and a better fit for me. So…uh, try that. You might be pleasantly surprised.
Chasing after someone you know is in a relationship is bad enough, but harassing them just shows how terrible a person you are. Their partner may not have the same 'success' as you, but I'm betting they treat them right. I doubt you would.
I think your probably under selling him. He's probably tall and a low demand job like Panera gives him plenty of time to actually be around. Those 2 things can easily be extremely attractive. That said people like who they like all you can do is t and be your best self and get out there.
