That's actually all pretty standard for braces. Totally worth it though. That lisp will probably go away if you open your mouth a bit more when you speak.
Gums gushing blood is absolutely not standard for an orthodontist. You might want to change orthodontist.
I'm British and even we know that shouldn't happen. You should change Orthodontist, or at least get a second opinion on what this one is doing. Complete hacks can present as entirely professional right up until they actually start working on you. Also, you want the liquid replacement meals rather than baby food. You don't need to feel extra sh!tty on top because your body isn't getting everything it needs. Especially if you are still growing. But seriously, get a second opinion at the very least. The damage a bad/greedy dentist/orthodontist can do lasts a long time and can cost a fortune to fix later.
