The only reason they could hear it was because my apartment has pretty thin walls and I was doing dishes, watching it on my laptop beside me. The volume was cranked so I could hear it and of course that suuuuper long scene with Little Finger and the two girls came on -_- They were good about the whole thing and laughed it off and I promised to turn it down.

If I were the neighbor I might care if say, the **** was loud enough that my young child could hear it through the walls. That would be entirely unnecessary and definitely an acceptable reason to have a chat with someone next door. In other words, no it isn't their business what you watch, unless you make it their business by playing it much louder than necessary.
I kind of got the impression that the neighbours do care otherwise why would OP feel he needed to explain himself?
I'm guessing it's an audio reason they thought you were watching ****, try headphones. Or tell your neighbor it's none of their business what you watch.

Exactly! People keep saying they probs heard it through the couch but in game of thrones it's usually the visual that would be more graphic than the audio. I honestly don't think that the audio would sound pornographic unless the neighbours have never seen or hear real ****. But yeah so I'm just thinking the neighbours have seen game of thrones and assumed but how would they see it without being super creepy. I'm overanalysing this I know but I think the neighbours and the inappropriate ones.
