Today, my 37 year-old cousin said she wants to cheat on her long-time, loving husband because she never got to have any fun in her life. He would never do it to her. She told me this information because she thinks I would "understand" her situation. I really don't know what to do with this information. FML

If it is safe for you and your cousin to do so, you need to tell him. It could ruin his life and health depending on who your cousin cheats with and how far she goes.

Tell her that you don’t understand the inclination and that you would prefer her not to talk to you about this in the future. If it sounded like she was truly making plans to cheat, or you find out that she is/has cheated, and she was not just expressing a desire, then I agree that you may want to let the husband know. Otherwise, it’s not your business to inject suspicion into their marriage.
