In their defense it's hamburger. Hamburger is more likely to have parasites and E. Coli than any other kind of meat. As such most places that you order a burger at will not ask you how you want it cooked they just cook it. I had been asked before how I wanted my steak cooked but the first time I found a place that asked me how I wanted my burger cooked it took me off guard too. It's not common for a place to give you any option other than well done.
