Today, my ex friend turned half the school against me, saying I stole and damaged her phone, both lies. Things escalated and she threatened to jump me if I didn't apologize. I apologized but now she's making me pay money for something I didn't do, and I'm seriously considering a restraining order. FML

Get the police involved. Report all of it, show your evidence/proof if you have it, especially the threats of violence. That way if anything does happen, it's all recorded when you have her arrested for assault.

that’s when you call her bluff and say you’ll kick her ass. will you? no, but she’ll think you will, and that’s enough to send most anyone off. if it don’t. mace is a good option

Never admit to things you didn’t do or apologize for something you didn’t do. Once you admit to something or apologize for the other party will claim that’s an admission of guilt… Get the police involved. Your ex friend is no good and probably knows exactly what they are doing to you.
