I've never been stupid enough to do this. So what happens when you mix hot water and hot oil.

It just has to be water, cold or hot, the oil doesn't discriminate.

Well, I would think, given what I remember of science, that it pops and sprays hot oil everywhere.

It can catch fire and explode. Which is why you're not supposed to put out an oil fire with water.
