Today, I learned that instead of discarding expired products at my work, we change the label to make them 'expire' later. FML

Ewww! That sounds like that's illegal to do...

I say report them to whatever trading standards board you have in the US. That's illegal and if someone gets ill eating their food, they'll be able to sue. Big time.

To be fair, regardless of expiration dates, if your senses tell you a food is OK(if it smells OK and has no mold on it), it most likely is. When a food expires depends on too many factors to account for for an expiration date to be any more than a rough estimate. Now, if the food had stuff growing on it or really smelled like death, than they should have been throwing it out rather than trying to cover it up. I need more details on the state of the food before I can really vote YLS.
