File a claim at VCAT if you have proof. Won't cost you too much and yo can represent yourself!!!

Send a registered mail letter of demand. If there is no response within the time frame specified, you can take him to Small Claims. This is the most cost effective way to get money back in Australia, from one who's been there. Good luck OP!
Fair work Australia will fight your case for you. As well as employment ombudsman. They offer their services for free. Don't let the moron get away with it

yeah...that's happened to me. I'll never see my $1,200 that I'm owed.
This happened to me once. And I found out my old boss did this to many other people and violated many labor laws. I walked straight into thr Department of Labor and report everything. He was sued, we were all paid PLUS given extra. His restaurant was closed down. I have no regrets. He was a greedy terrible man. Good luck!
Send a notice by registered mail saying he has one month to pay what he owes or face legal action. He'll have to sign for it so you can prove he was notified then sue
Alright, I'm the OP and I'd like to make it clear that I DID NOT LOAN THIS MAN ANY MONEY. He owes it to me from my services to his business, AKA my work, and it's my accrued annual leave that I'm legally entitled to on resignation. I was never able to take a holiday (a paid holiday, that is) as my boss could never agree on the times I'd requested (he's cheap) so it's quite a lot of money. So far I've contacted the fair work commission and I'll see how it goes from there.
