Well, circumcision =/= castration. The first is much less extreme, and does have some sanitary benefits. But, your body, your choice, good luck.

Leave the girl. Ignoring the fact that what she wants involves surgery and is not something that can be reversed, first it is 'me or foreskin', then it is 'me or the car', then 'me or your friend'. And the more you give up, the less likely you are to leave her. You will think, 'Well, I already gave up so much, losing her would make it all in vain.' Once you establish that she can use herself to make you do what she wants, she will. Also, too many people want someone to love them for who they are, but want others to change for them.
