Today, my professor changed the due date of an assignment, but never changed it on the site we were supposed to turn it in on, now the assignment is closed and locked, she's not in her office, and she's not responding to emails. FML

I'm sure others in your class are having the same problem. It'll work out just be patient (: If the timing is crucial maybe email her the assignment so she knows it was completed in time

If she's completely off the grid, talk to the department head or dean about it. Or at least that it's rather unprofessional of her to vanish with no warning and not return attempts to contact her. Before doing that, I'd double check with your classmates that she actually said that- if it's written down somewhere, that's even better.

take a screenshot of the hand in date with the current date. you can use that to prove he/she never updated it leading you and possibly others to miss the new hand in date.
