Today, my sister, who moved in with me, after a failed marriage and lives effectively bill free (AND owns a horse) - applied for her holiday visa to the States so she can go to a wedding with a guy she met on Tinder (2 dates to confirm he's not a psycho). Parents say I'm wrong for saying no. FML

What did you say no to? Her moving in with you? Going with her? Paying for it? She obviously doesn't need your permission to go if she's an adult woman and paying for it herself.

Make them take responsibility for your sister. If they're happy for her to go, they shouldn't be giving you the burden of dealing with the aftermath if it all goes wrong.
