Mood rings work on temperature. Heat can signify arousal because blood flow to the skin increases. Blood flow to the skin can also increase when a person is extremely relaxed, and it is a proven fact that petting animals causes relaxation. Besides all that, cats naturally have a higher body temperature than humans. A mood ring would misread these signs as the boner of all time.
