That sounds like a case of mixed signals from your "crush". Unfortunately that happens in life. When in doubt, believe what the person tells you... I don't believe anyone has ever made it out of the "friend zone" into the romantic relationship zone who had been trying for a romantic relationship. That's in part because telling someone you just want to be a friend is often a gentle way of saying they aren't interested in you but don't want to hurt your feelings... I agree that we all need friends and the more the merrier. But when that "friend" is someone you really still want a romantic relationship with, I think it just becomes frustrating and may ultimately interfere with finding a person who will reciprocate your feelings. If this "friend" is someone you are going to continue seeing because of work or school or mutual friends, then just let it be a simple friendship if you can accept that's all it will ever be.
If she has a BF she is about to marry it sounds really weird she'll go on something that resembles a date with someone else without making it clear that it is not one. But like you said, a lot of times making up stories is easier than rejection
