If you're in New Zealand, you can and should definitely take this to court. You will win your job back and likely a small compensation. You can't be fired in NZ... unless you steal or show up high. It takes a whole lot of communication and paper work for you and the boss to lose your job here.
Quite sure you can sue for wrongful dismissal.

How is the boss racist? The boss is being ridiculous and having some strange interpretation maybe but not racist.
#25 More often than not, the people who call out "racism" in innocuous things are some of the most racist people you could possibly meet. People who don't care about what "race" someone identifies with don't look for or point out "racist" things.

#31 I'm not so sure about that. Sometimes there are things that you may find fairly innocuous because you are not the target of that specific kind of racism but someone who is will find it racist. For example, a lot of non black people think that the phrase "you're pretty for a black girl" is a fairly innocuous compliment. However, if you're black that "compliment" is going to make you feel really uncomfortable and you will find it racist. However, I will agree that finding racism in the situation that OP mentioned is ridiculous.

This is definitely an arguable point, and clearly a bullshit reason to lose your job. Your boss should legally not be able to fire you for having an opinion (even you were racist) let alone suspecting you felt that way.
