i used to have braces when i was younger and from what i remember, it took me about 2 weeks until i could eat solid foods again. it took my friends (who also had braces) about the same time. so i guess 3 weeks isn't that bad. but if it isn't better by next week you should try explaining to her that the pain is too much to handle, maybe get your parents to talk to her. or try to find another dentist if that's possible.
Second opinion time! Then depending on what that one says, a malpractice suit may be in order.
A few years back, my dentist almost broke my jaw. I couldn't talk, eat, etc. so I understand. He never said it was his fault. I still have issues with my jaw almost every day.
Your fine. When I got braces it was soft food and liquid for nearly a month.
I remember having braces, not only could I not eat after having them it hurt for about a well after every adjustment. I am glad my teeth are straighter but it was bloody awful.

Run. And get a new orthodontist. I hated having braces. Every time I got them adjusted I couldn't eat solid food for a week. And the first one we went to let my pallet expander grow into the roof of my mouth. And he caught my lips in the wire snippers a few times.
Switch orthodontists if your concerns are not addressed. Your teeth are too important to waste your time with a non serious ortho.
