Did you already give her the finished essay? If not, delete the main body of text and replace it with "I'm leaving you for someone who's not too dumb/lazy to write their own essay." Then wait until the day it's due to give it to her. She won't have time to rewrite it and if you're lucky, she won't even check it before handing it in. The teacher can inform her she's been dumped and earned an "F" at the same time, then follow it up with a long lecture about student ethics. ...I'm just realizing how unforgiving I am this early in the morning...

Yes, this^. Definitely this. And I really, really hope she hands it in without reviewing it first. Not only is it justice for you, but the teacher will enjoy it thoroughly as well!
Put so many curse words in there that she can get expelled for it.
Time for some there/their/they're errors. 'She really didn't proofread this essay, did she?'
If there's still time, make all the basic mistakes there are to be made, grammatically, spelling wise etc. And for extra kicks, add in a comment directed at the teacher somewhere in the text (which really can range from flirty comments to make it as awkward for your girlfriend as possible afterwards, to saying it straight out that you cheated for her, to say that she made someone else but not mention name, cheat for her), there's very little chance of anyone besides the teacher catching that if it is only a short message/comment
Why would you do her essay for her to begin with? She should be doing it herself.
